Break With Tradition this St. Patrick’s Day Holiday With a Savory Corned Beef Soup

The St. Patrick’s Day holiday brews up memories of corned beef and cabbage for many, but why not try this traditional favorite with a new twist for the holiday? Matt Lee, owner of Lee’s Cleveland Pub & Grill in New Berlin, offers a recipe sure to please the Irish in all of us, a succulent Corned Beef Soup. This hearty dish pairs well with rich and satisfying Irish brews, along with seasonal craft and premium beers sure to please the palette. Here’s a rich and hearty recipe for family and friends to share this St. Patrick’s Day holiday or anytime you’re feeling a little Irish:

 

Recipe: Corned Beef Soup

Ingredients:

· 1 pound Corned Beef brisket (can be pre-cooked)

· 1 onion chopped into ¼ inch chunks

· 2 carrots chopped into ¼ inch chunks

· 1 celery stalk cut into ¼ inch chunks

· 10 baby red potatoes chopped into ¼ inch chunks

· 3 cups chicken base

· 1 garlic clove

· Pinch of thyme

· Salt and pepper to taste

 

Directions:

 

1. If using a traditional corned beef brisket, prepare in a slow cooker or Dutch oven according to instructions.

2. Peel the potatoes and cover with water. Bring them to a boil and simmer for about 10 minutes. Set aside.

3. Chop the cooled potatoes, carrots, onion and celery into ¼ inch chunks.

4. Sauté the remaining vegetables starting with the carrots (about 7 minutes), onions (about 5 minutes) and celery (for 3 minutes).

5. Cut the corned beef into small cubes; be sure to cut it across the grain so the meat will be more tender.

6. Combine all ingredients in the slow cooker or Dutch oven and add the chicken base, garlic clove (smashed), and seasonings.

7. Stir the mixture and simmer for about 20 minutes.

8. Spoon into dishes and serve piping hot.

· Capital Brewery Blonde Dopplebock – A sunny-colored dopplebock, this beer boasts a satiny medium-full body of enveloping layers of caramel, toasted grains and breads, marmalade, and delicate spices.
