The Brookfield Plan Commission likes the flavor of Red Robin's newest plans for a 5,700-square-foot freestanding restaurant and bar at the former Houlihan's site at Brookfield Square.
Featuring a larger and more distinctive entrance than seen in previously floated plans, the current renderings also show faux second-story windows on the building's north side, which faces Mitchell's Fish Market, and other architectural elements designed to make the structure visually appealing.
With one member absent, the city's Plan Commission on Monday unanimously gave its support to Red Robin, recommending the Common Council approve its plans.
Red Robin, a purveyor of gourmet burgers, operates nine other Wisconsin locations. It originally came before the city for approval in February, but Plan Commissioners said they wanted a more interesting-looking building, so the restaurant came back with revised plans Monday.
"As a whole, I'm very happy with the changes (Red Robin) made to the project," Commissioner Kevin Wahlgren said.
Commissioner Paul Wartman agreed, saying the new design was "much richer" than the previous plans.
"I'm really looking forward to Red Robin being a part of the Brookfield community," he said.
Red Robin would be open from 11 a.m. to 10 p.m. Sunday to Thursday and 11 a.m. to 11 p.m. Friday and Saturday.
The restaurant's seating capacity would be more than 200.
The tentative plan is for the eatery to open this fall.
