Staring into my kitchen pantry (can opener in hand), I wonder why only niche, gourmet cooking classes are offered at our local, community colleges. Personally, I don't need a multi-week course on preparing hard-to-find meats and vegetables; I just need to cobble together an edible meal from the dusty cans of unappealing foods currently buried in my pantry.
